Lemon Pepper Chicken Breast

Ingredients
- 2 lemons, ends removed
- 12 boneless, chicken breast
- 2 tbs lemon peper
- 1/2 tsp salt
- 2 tsp chili powder
Directions
- Lightly brush grill rack with vegetable oil. Then prepare the grill
- with medium hot coals, or heat a gas grell.
- Slice each lemon into 6 thin rounds. Pick out seeds and discard.
- Arrange the slices in a single layer on a microwave safe plate.
- Cover the plate and microwave the lices at full power for 1 minute.
- Set the slices aside to cool.
- Place chicken between sheets of plastic wrap. Pound with meat
- pounder or bottom of heavy skillet to even thickeness. jSeason with
- lemon pepper and salt.
- Grill chicccken breast until firm and browned, about 4 minutes per
- side; and instant read thermometer inserted in thickest part of
- breast shoul register 160 degbrees. Remove to platter and keep warm.
- Sprinkle lemon slices with chili powdere. Grill until browned on
- both sides, for about 40 seconds per side. Place 2 lemon slices on
- each chicken breas to garnish, and drizzle with any juice remaining
- in microwave dish.
- Oven Method: Heat broiler, coat broiler pan rack with nonstick
- cooking spray. Place seasoned chicken breast on rack. Broil 4 to 6
- " from heat for 4 to 5 minutes per side or until browned on both
- sides and internal temperature registers 160 degrees. Broil seasoned
- lemon slices about 40 seconds per side.
