Buffalo Chicken Wings

Ingredients
- 20 to 25 Chicken Wings, 3 1/2 #
- 1/4 cup (1/2 stick) butter or
- margarine
- Vegetable oil for deep frying
- 1/2 to 1 whole 2 o.z. bottle hot-
- pepper sauce
- 1 bunch celery, cut into ribs
Directions
- Trim off tip; discard. Halve each wing at joint.
- Heat 2 1/2 to 3 inches oil in skillet or deep fat fryer to 375
- degrees. Working in batches, deep fry wings in hot oil until crisp
- and golden brown on all sides, 8 to 10 minutes. Remove wings with
- slotteds spoon to paper towel to drain.
- Melt butter in small saucepan. Blend in hot pepper sauce, the amount
- depending on how hot or spicy you like your food.
- Place chicken wings in large bowl; pour hot butter sauce over wings
- and mix well.
- Arrange wings on deep plattter. Serve warm with celery sticks and
- blue cheese dressing in a bowl for dipping.
