Sausage Kale Sauce

Ingredients
- 12 o.z. fresh kale
- 8 o.z. sweet Italian-style sausag
- 1 Tbs all-purpose flour
- 1 Cup chicken broth
- 1 Can (14 o.z.) diced tomatoes in
- juice
- 1 Can (16 o.z.) red kidney beans,
- 1/2 tsp crushed hot red pepper
- flakes
- 1 lb rotini (twist) pasta cooked
Directions
- Wash the kale and tear the leaves off the stems and into bite-size
- pieces (discard the stems).
- In a large nonstick skillet, cook the sausage over medium heat for
- about 3 minutes, stirring often, until browned. Remove the sausage
- with a slotted spoon to a plate.
- Put the kale in the skillet and toss for about 45 seconds, or until
- the kale turns bright green. In a small bowl, stir the flour into
- the broth. Add to the kale and bring to a boil.
- Add the tomatoes, beans, and crushed red pepper.
- Simmer for about 6 minutes for the flavors to blend. Stir in the
- sausage and simmerfor 1 minute more or until heated through. Toss
- the sauce with hot pasta and serve right away.
- Serves 5.
