Turkey Sausage with Chick Peas

Ingredients
- 1 tsp olive oil
- 10 o.z. hot italian turkey sausag
- (90% or more fat free), casing
- removed.
- 1 medium green bell pepper,
- coarseley chopped
- 1 cup chopped celery
- 4 garlic cloves, minced
- 1/2 tsp ground thyme
- 1/2 tsp fennel seeds
- 1 cup chicken broth
- 1 tbs cornstarch
- 1 tbs worcestershire sauce
- 3/4 vup spicy mixed vegetable
- juice
- 4 oz uncooked couscous
- 8 oz cooked chick peas
Directions
- In large nonstick skillet, heat oil; add sausage, Cook over medium
- high heat, stirring frequently to break up sausage, 6-8 minutes,
- until browned. Add bell pepper, celery, garlic, thime and fennel
- seeds; cook, stirring frequently, 4-5 minutes, until tender.
- Meanwhile, in a 1 cup liquid measure, combine broth, cornstarch
- and worcestershire sauce, stirring to disolve cornstarch. In small
- saucepan, bring juice to a boil; remove from heat. Stir in couscous,
- cover, and let stand, about 5 minutes.
- Stir broth mixture and chjick peas into sausage mixture, bring
- to a boil. Reduce heat to low; simmer 2-4 minutes, until sauce
- thickens.
- To serve, fluff couscous with fork; divide evently into each of
