Chicken in Wine Sauce
Ingredients
- 5 whole chicken breast
- Salt
- Ground nutmeg
- 2 tbp melted butter or margarine
- 2 tbp minced onion
- 1/4 # mushrooms
- 2/3 C. Dry white wine
- 1/4 C cashews (optional)
- 1 tsp cornstarch
- 2 tsp dry white wine
- Hot cooked rice
Directions
- Sprinkle chicken with salt and nutmeg; bwown each side in butter in a
- heavy skillet. Add onion, mushrooms, and 2/3 cup wine; add cashews,
- if fesired. Bring to a boil; reduce heat, cover, and simmer 15
- minutes. Remove chicken.
- Combine cornstarch and 2 teaspoons wine; mix well and stirr into
- skillet. Cook, stirring constantly, until sauce is thickened.
- Serve chcien and sauce over hot cooked rice. Yield 2 servings.
