Schnitzel
Ingredients
- 6 1/4" thick cutlets
- 3 eggs
- 1 1/2 tsp salt
- 3/4 tsp brown pepper
- 3/4 C. All purpose flour
- 1 1/2 Soft bread crumbs
- 3/4 C. butter or margarine
- 5 o.z. gruyere cheese thinly slic
- 3 TBSP parsley flakes (Optional)
- Lemon slices
- Fresh parley sprits (optional)
Directions
- Place cutlets on sheet of wax paper. Using a metal mallet or rolling
- pin, flatten to 1/8 inch thickness. Combine eggs, salt, pepper; beat
- well. Dredge cutlets in flour; dip in egg wash, and add bread
- crumbs. Melt butter in a large skillet over medium heat; add cutlets
- and saute 4 to 5 minutes. Sprinkle with parsley flakes if desired.
- Serve cutlets with lemon slices; garnish with parsley sprits if
- desired.
- Yields 6 servings
