Tex Mex Turkey Bean Soup

Ingredients
- 2 tsp Olive oil
- 8 o.z. Ground Turkey
- 1 C. chopped onion
- 1 1/2 C. water
- 1 can 16 o.z. Refried beans
- 1 C. medium spicy thick and
- chunky salsa
- 1/4 tsp chili powder
- 1/4 tsp ground cumin
- 6 Taco shells
- Shredded Cheddar Cheese
- Shredded Iceberg Lettuce
Directions
- 1. In a Large saucepan, heat the oil over medium high heat. Add the
- turkey and onion and cook, stirring often, until the turkey is brown.
- 2. Add the water, refried beans, salsa, chili powder, and cumin.
- 3. Bring to a boil over medium high heat, stirring often.
- 4. Reduce the heat to medium low and simmer under cover for 10
- minutes stirring occasionally.
- 5. Meanwhile heat the Taco shells as directed on the package and
- coarsely crush them.
- 6. Ladle the soup into bowls and top with the crushed taco shells.
- Garnish with cheese and lettuce. Serve right away. Serves 4.
