MACARONI SALAD
Ingredients
- 2 CUPS [8 OUNCES] ELBOW MACARONI
- 1 C. MAYONNAISE OR SALAD DRESSING
- 1/2 CUP FINELY CHOPPED CELERY
- 1/3 CUP FINELY CHOPPED CARROTS
- 1 HARD COOKED EGG, CHOPPED
- 1/4 CUP MINCED ONION
- 2 TBSP SWEET PICKLE RELISH
- 3/4 TEASPOON DRY MUSTARD
- 1/4 TEASPOON SALT
- 1/8 TEASPOON PEPPER
- DASH PAPRICA
Directions
- FOR 8 OUNCES OF ELBOW MACARONI, USE 3 QUARTS OF WATER. BRING THE 3
- QUARTS OF WATER TO A BOIL. EMPTY CONTENT OF PACKAGE INTO BOILING
- WATER AND STIR. RETURN TO A BOIL AND BOIL, UNCOVERED, FOR 6 TO 8
- MINUTES. FOR BEST RESULTS, AVOID OVERCOOKING. DRAIN WELL. RINSE WITH
- COOL WATER TO COOL QUICKLY; DRAIN WELL. COAT WITH 1 TABLESPOON OF
- BUTTER OR MARGERINE, IF DESIRED. COMBINE COOKED ELBOW MACARONI WITH
- REMAINING INGREDIENTS AND TOSS LIGHTLY. COVER AND REFRIGERATE. SERVES
- 4 TO 6 PEOPLE.
