Fajitas
Ingredients
- 1 onion, chopped
- 2 T. chili powder
- 2 cloves garlic, chopped
- Juice of 1 lime
- 1 tsp cumin
- 1 tsp oregano, Mexican salsa
- Salt and pepper, sour cream
- 1 bottle beer, flour tortillas
- 6 skinless, boneless chicken
- breasts, cut in 2 inch strips
- Oil, green & red peppers
- Onion, cut in wedges
Directions
- Blend all ingredients except chicken in food porcessor.
- Marinate chicken at least 30 minutes, preferably overnight. In a
- large saute pan heat some oil and add some onion wedges, green and
- red pepper wedges, garlic, salt and pepper. Toss for a bit and then
- add the chicken strips. Saute, stirring constantly until the chicken
- is cooked through. Serve with flour tortillas for wrapping and add
- sour cream, Mexican salsa and raw onion slices.
