Macaroni casserole
Ingredients
- 1 1/2 lbs. ground beef
- 1 med green pepper, diced
- 1 (6 o.z.) can tomato paste
- 1 (8 o.x.) can tomato sauce
- salt
- 3/4 tsp. oregano leaves
- 1/4 tsp. crushed red pepper
- 2 to 3 cup elbow macaroni, cooked
- 1 c. creamed cottage cheese
- 1 c. grated chedddar cheese
Directions
- Cook the ground beef in a large saucepan until brown, stirring
- frequently. Then drain off fat. Add the onions and green pepper and
- cook for 1 minute. Stir in the tomato paste, tomato sauce, 1 1/2
- teaspoons salt, oregano, red pepper and cover. Cook over low heat
- for 20 minutes. Place half the cooked macaroni in a 2 1/2 quart
- casserole and add half the beef mixture. Spoon cottage cheese over
- beef mixture and sprinkle with 1/4 cup of cheddar cheese. Repeat
- layers of remaining macaroni; beef sauce and cheddar cheese.
- Bake in 375 degree oven for 15 minutes longer. Cover loosely
- with foil and bake for another 15 minutes. Serves 6.
