Barley Pilaf
Ingredients
- 2 o.z. Whole Butter
- 4 o.z. Onion Fine diced
- 1 pt Pearled Barley
- 1 ea Bay Leaves
- 1 qt Chicken Broth
- tsp Salt
- tsp Ground black pepper
Directions
- Melt the butter in a large, heavy saucepan over moderate heat. Add
- the onions and cook until translucent.
- Add the barley and bay leaf. Saute until the grains are well coated
- with butter.
- Add the hot stock and season to taste with salt and pepper. Reduce
- the heat until the liquid barely simmers.
- Cover and continue cooking until all of the liquid is absorbed and
- the grains are tender, approximately 30 minutes.
- Fluff with a fork and adjust the seasonings before serving.
