Rice Bake
Ingredients
- 1 1/4 cups textured soy granules,
- caramel colored
- 1 cup hot water
- 1/4 cup soy oil
- 1 1/2 cups chopped onion
- 1/2 cup diced green pepper
- 1 clove garlic, minced or pressed
- or (1/8 teaspoon dry)
- 1 teaspoon chili powder (optional
- 1/2 teaspoon salt
- 1 can whole tomatoes (16 o.z.)
- 1 can kidney beans (15 o.z.)
- 1 tsp sugar
- 3/4 cup uncooked rice
- 2/3 cup shredded cheddar cheese
Directions
- Rehydrate soy granules in hot water for 10 minutes. Place oil in a
- large skillet. Add onion, green pepper and garlic. Saute until
- vegetables are half cooked. Add rehydrated granules, chili powder
- and salt. Continue to saute 10 minutes. Add undrained tomatoes,
- undrained kidney beans, sugar and rice. Mix thoroughly. Place
- mixture in a 1 1/2 qt. casserole. Bake covered at 350 degrees F for
- 1 hour. Stir gently. Sprinkle with shredded cheese. Cover. Bake 5
- minutes longer at 350 degrees F.
- Serves 6 to 8.
