Pasta Primavera
Ingredients
- 1 pound pasta of your choice
- 1/4 cup extra-virgin olive oil
- 2 teasponns minced garlic
- 6 cups mixed seasonal vegetables
- (such as chopped carrots,
- asparagus tips, fresh peas, corn
- kernels)
- 1 1/2 cups homemade chicken stock
- or canned broth
- 1/4 cup chopped fresh basil leave
- 2 tablespoons chopped fresh
- parsley
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Grated parmesan cheese (optional)
Directions
- Bring a large pot of salted water to boil. Add the pasta and cook
- according to the package directions until it is just tender.
- Meanwhile, heat the oil in a large skillet. Add the garlic and
- vegetables, and saute for 4 to 5 minutes over medium heat, or until
- just tender.
- Add the chicken stock, basil, parsley, salt, and pepper, and bring to
- a boil over high heat.
- Remove the skillet from the heat and keep warm.
- Drain the pasta thoroughly and transfer it into a warmed serving
- bowl. Toss it with the vegetable sauce and serve immediately,
- sprinkled with freshly grated parmesan, if desired.
