Mexican Luncheon Dish
Ingredients
- 1 lb groun round steak
- 1 green pepper, chopped
- 1 lge onion, chopped
- 2 T butter or margarinc
- 4 c. tomatoes
- 1 no. 2 can kidney beans
- 1 c. diced carrots
- 1 can mushrooms (optional)
- 1 cup rice ( uncooked)
- 1/4 c sugar
- Dash of chili powder
- Salt & pepper to taste
- 1 can sweet peas
- Garlic bread
Directions
- 1. Brown groun meat, green pepper and onion in butter or margarine.
- 2. Add tomatoes, kdney beans, carrots, mushrooms, rice, chili
- powder, sugar, salt, pepper to taste.
- 3. Cover and cook over HIGH heat for 6 minutes, or until steaming.
- 4 Turn switch to LOW or WARM and allow to cook for 20 - 25 minutes.
- 5. Serve with buttered peas, garlic bread, cole slaw; with jelly
- roll for dessert.
