Ingredients
- 4 (1 inch thick) loin pork chops
- Salt and pepper to taste
- 1 tbsp vegetable oil
- 1/2 pound fresh mushrooms, sliced
- 1 medium onion, chopped
- 1 small clove garlic, crushed
- 2 medium-size green peppers, cut
- 2 (8 ounce) can tomato sauce
- 1/4 tsp whole oregano or basil
- 1 tbsp lemon juice
- 1/4 cup dry sherry
Directions
- Sprinkle pork chops with salt and pepper; brown on both sides in
- hot oil. Place chops in a shallow 2 quart baking dish; cover with
- mushrooms, and set aside.
- Add onion, garlic, and green pepper to skillet; cook until
- tender. Add remaining ingredients, and simmer 5 minutes; pour over
- chops. Bake at 350 degrees for 1 hour or until chops are done.
- Yield: 4 servings.
