Ingredients
- 2 pounds pork chops, boned and
- cubed
- 2 tablespoons vegetable oil
- 2 small calabaza or 2 large
- zucchini, peeled and diced
- 1/4 teaspoon groun cumin
- 1/4 teaspoon pepper
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1 (14 1/2 o.z.) can tomatoes
- drained
- 1 small onion, chopped
- Hot cooked rice (optional)
Directions
- Cook pork in hot oil until browned. Add remaining ingredients except
- rice. Cover; simmer 30 minutes or until squash is tender. Serve
- over hot cooked rice, if desired.
- Yield: 4 servings.
