Moroccan Chicken Stew
Ingredients
- Chicken Breasts (4 ea)
- 1 can diced tomatoes (14 o.z.)
- 1 can Chicken Broth
- 1/2 med butternut squash cubbed
- 1 can garbanzo beans drained
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 cup frozen peas
- 1 cup uncooked couscous
Directions
- Combine all ingredients except peas and couscous in large saucepan.
- Mix well.
- Bring to a boil. Reduce heat; simmer, stirring occasionally, 20
- minutes or until squash is tender and internal jices of chicken run
- clear.
- Stir peas into chicken mixture, simmer 5 minutes. Meanwhile, prepare
- couscous according to package directions.
- Serve chicken with couscous in large pasta bowl
