Chicken and Barley Chili
Ingredients
- 1 Cup Chopped Onion
- 1 Clove Garlic Minced
- 1 TBS Veg Oil
- 2 Cups Water
- 1 Can Chicken Broth
- 1 Can Whole Kennel Corn
- 1 4o.z. Green Chilies Chopped
- 1 TBS Chili Powder
- 1/2 TSP Ground Cumin
- 3 Cups (1.5#) Cooked Chicken
- 3/4 Cup Barley
- 1 Can Chopped Tomatoes
- 1 can (16o.z.) Tomato Sauce
Directions
- in a 4-quart saucepan or dutch oven, cook onion and garlic in oil
- until onion is tender. Add remaining ingredients except chicken.
- Bring to a boil. Reduce heat to low; cover. Simmner 10 minutes,
- stirring occasionally. Add cooked chicken; continue simmering 5 to
- 10 minutes or until chicken is heated through and barley is tender.
- Add additional water or chicken broth if chili becomes too thick upon
- standing.
