Hearty Cabbage Chowder
Ingredients
- 3 Tbs melted butter or margarine
- 2 1/2 Cups (1/2 lb) Cabbage Chope
- 1 lbge potato, finely chopped
- 1 1/2 cups water, divided
- 1 Chicken Bouilon cube
- 2 Cups Milk
- Salt and pepper to taste
- 1 Cup (4oz) shredded swiss cheese
- 1/4 cup all purpose flour
- 1/2 cup water
Directions
- Combine butter, cabbage, potatoe, and 1/2 cup water in a 3 qt
- saucepan; cover and cook over low heat about 20 to 25 minutes or
- until potatoes are tender. Slightly mash potatoes. Add remining
- water, bouillon cube, and milk; cover and simmer over lo heat 15
- minutes. Add salt, pepper, and cheese; stir until cheese melts.
- Yield 6 servings.
- Add carrots; cover and bake an additional 30 minutes. Add
- potaotes and onions; covedr and continue to bake an additional hour
- or until all vegetables are tender. Remove fron oven; set aside and
- keep warm. Cook green beans according to package directions; drain
- and set aside. Remove roast and vegetables to large serving platter,
- reserving 2 3/4 cups drippings in dutch oven. Arrange green beans on
- platter with roast. combine flour and 1/2 cup water, mixing well to
- form a paste. Gradually stir flour mixture into reserved pan
- drippings; cook, stirring constantly, until thickened and b ubbly.
- Serve gravy with roast. Yield 8 to 10 servings.
