Chines Fried Rice
Ingredients
- 1 tbs. butter
- 1 3/4 cups water
- 2 eggs
- 1/2 tsp. salt
- 1 cup peas
- 1 tsp. salt
- cube of fresh ginger root(1 in.)
- 1 clove garlic
- 2/3 water or chicken stock
- 1 tbs. soy sauce
- 1 1/4 cups long grain rice
- 1/2 head of chinese cabbage
- 1/2 pound small chicken
- 1 small onion
- 1 tbs. vegetable oil
Directions
- Cook the rice. Cook the peas in boiling water, slightly salted
- water for 5 minutes, then drain them. Peel the ginger and chop it
- finely. Peel and crush the galic. Slice the onion and the Chinese
- cabbage. Heat the oil in a large skillet and fry the onion, garlic,
- and ginger in it gently, stirring constantly for about 5 minutes. Add
- the sliced Chinese cabbage to the skillet. Cook it over high heat for
- about a minute, stirring all the time. Add the rice, water, and soy
- sauce, then the chicken and peas. Stir everything together and cook
- it for a few minutes. Beat the eggs. Make a hollow in the rice, pour
- in the eggs, and cook them for a few minutes, then stir them into the
- rice.
