Sausage Soup
Ingredients
- 1 Tbsp Extra Virgin Olive oil
- 6 links (1 lb) Sausage
- 3 Cups spanish onion; diced 1/2 "
- 4 cans (14.5 oz) beef broth
- 1 Cup rice uncooked
- 1 Can (28 oz) Italian Tomato with
- basil
- 1 tsp dried basil
- 1/4 tsp black pepper
- 1/2 cup parmesan grated cheese
Directions
- 1. Heat olive oil in large soup pot over medium heat. Add sausages
- and brown for 2 minutes per side. Remove from pot.
- 2. Add chopped onions and cook until translucent, about 5 minutes
- (do not brown)
- 3. Add beef stock, rice and tomatoes. bring to boil; reduce heat to
- medium-low and simmer 20 minutes until rice is tender.
- 4. While soup is simmering, remove casing from sausages by cutting
- a shallow leghtwise cut; peel off casing. cut sausages crosswise
- into 1/2 " wide pieces.
- 5. Return sliced sausages to pot. Season with basil and pepper;
- simmer 2 minutes to reheat sausages.
- 6. Ladle soup into crocks and sprinkle with parmesan cheese.
