Tatatouille with Bowtie pasta
Ingredients
- 1 Tbsp Olive Oil
- 1 (6 oz) links sausage, cut in
- half lengthwise
- 2 tsp garlic, minced
- 1/2 C onion, diced
- 1 C green pepper, diced
- 1 C yellow squash, diced
- 1 (16 oz) jar marinara sauce
- 1-1/2 C Tomato Basil Mozzarella
- cut in strips
- 1 lb bowtie pasta cooked.
Directions
- 1. Preheat oven to350.
- 2. In large ovenproof skillet, heat olive oil and cook sausage till
- just done and golden brown; set aside and keep warm.
- 3. Add garlic, onion, green pepper, eggplant and yellow squash to
- skillet; cook til crisp tender; pour in marinara sauce.
- 4. Gently simmer 5 minutes, stir in cheese and pasta, top with
- sausage and bake for 10 minutes.
- Serves 4
