Chicken Curry
Ingredients
- 2 Cups Rice
- 2 TBS olive oil
- 1 lb Chicken
- 1 Tsp Salt
- 1/2 tsp pepper
- 1 onion
- 1 Tbs cury powder
- ]1TBS vinegar
- 1 pkg (1lb) frozen mixed veg.
- 1/2 cup chicken broth
- 1 TBS honey
Directions
- Cook rice according to package directions; set aside. Meanwhile, in
- large nonstick skillet heat 1 tbs oil over high heat. Add chicken;
- sprinkle with 1/2 tsp salt and 1/4 tsp pepper. Cook, turning once,
- until cooked white. Remove from skillet; keep warm. In same skillet
- heat remaining oil. jAdd onion, curry and vinegar; cook, stirring
- occassionally, until onion just begins to soften, about 2 minutes.
- jAdd vegetables, broth and remaining salt and jpepper. Cover; cook
- stirring once until heated through, about 5 minutes. Stir in honey
- and reserved chicken, cook 1 minute. Serve over rice.
