Italian CHicken w/ Sausage
Ingredients
- 2 tsp olive oil
- 10 o.z. skinless boneless chicken
- breast, cut into 1" pieces
- 5 o.z. hot italian turkey sausage
- (90% or more fat free), cut
- into 1/2" thick slicles
- 2 tbsp red wine vinegar
- 2 med green bell peppers, cut
- into strips
- 1 med red onion, chopped
- 2 garlic cloves, minced
- 1/2 tsp dred basil leaves
- 1/2 tsp dried italian seasoning
- 2 1/2 cups canned crushed tomatoe
- 1/2 cup low-sodium chicken broth
- 2 tbsp grated Parmesan cheese
- 2 tbsp rinsed drained capers
Directions
- 1. In large nonstick skillet, heat oil; add chicken. Cook over
- medium-high heat, stirring frequently, 6-8 minutes, until golden and
- cooked through. With slotted spoon, transfer chicken to bowl; set
- aside.
- 2. Add sausage to skillet; cook, stirring frequently, 8-10 minutes,
- until browned. Pour in vinegar; cook 1-2 minutes, utnil liquid
- evaporates. Add peppers, onion, garlic, basil and Italian seasoning;
- cook, stirring frequently, 4-5 minutes, until tender.
- 3. Stir in tomatoes, broth, cheese and capers, bring to a boil.
- Return chicken to skillet; reduce heat to low. Simmer, stirring
- occasionally, 5-10 minutes, until sauce thickens slightly.
- Each Serving provides: 1/2 fat, 2 1/2 vegetables, 3 proteins, 20
