Savory Potato Salad
Ingredients
- 6 Med Potatoes cut in cubes
- 1 Med Onion Chopped
- 2 Hard Cooked Eggs Chopped
- 1 Cup Mayonaise
- 1 TBS Olive Oile
- 1 TBS Vinegar
- 1/2 TSP Dried Dillweed
- Salt and Pepper
Directions
- Cook potatoes in a small amount of boiling salted water for 10 to 15
- minutes or until tender; drain well.
- Combine potatoes, onion and eggs; set aside. Combine mayonaise,
- oil, vinegar and dillweed; gently stir into potatoe mixture. Season
- potato salad with salt and pepper to taste. Serve warm or cover and
- chill. Yield 6 to 8 servings.
