Beef Barley Soup
Ingredients
- 10 o.z. boneless round steak,
- cut into eighteen 1" cubes
- 3 o.z. barley
- 1 1/2 o.z. dried lima beans
- 3/4 cup chopped onions
- 3/4 cup chopped carrots
- 1/2 cup sliced celery
- 1 tsp salt
- 1/4 tsp fennel seeds (optional)
- 1/8 tsp pepper
- 1 cup sliced mushrooms
Directions
- 1. In large saucepan, combine meat; barley, lima beans and 5 cups
- water. Bring to a boil; skim off foam. Add onions, carrots, celery,
- salt, fennel seed if using, and pepper. Bring back to a boil; reduce
- heat. Simmer, covered, 1 1/2 hours.
- 2. Add mushrooms. Cook, covered, 15 minutes onger, or until meat is
- tender.
- Each serving 1 1/2 cups provides: 1 1/2 vegetables, 2 proteins, 1 1/
- 2 breads
- Per serving: 236 calories, 22 g protein, 4 g fat, 28 g carbohydrate,
- 617 mg sodium, 41 mg cholesterol, 7 g dietary fiber.
